Its distinctive Three Kingdoms decor creates a wonderfully old-world atmosphere, as though you had travelled back through time . More surprising still, the restaurant is open 24 hours, so late-night hotpot cravings and early-rising mala enthusiasts are equally well served. The broth options are varied — classic Sichuan mala, mellow cheese and milk, pickled cabbage with pork, Korean kimchi and more — and with the mala base, duck blood and tofu can be refilled without limit, making the value exceptional.

5. A-yu Beef Hotpot

Awardeda place in the Michelin Guide, A-yu Beef Hotpot is one of the definitive names in Tainan’s fresh beef hotpot. The Kunlun branch in Rende District is spacious and comfortable, serving high-quality beef sliced to order. The shop insists on Taiwanese beef processed fresh each day and hand-sliced by experienced staff, keeping it tender and pleasing to eat. The broth is simmered for hours from beef bones with a range of vegetables and fruit, clear and sweet without heaviness, setting off the beef perfectly.
