A:Don’t worry. Tainan’s sweetness comes from simmering ingredients with onion and sugar cane – it is a rounded sweetness rather than a sugary one. If it isn’t to your taste, ask for less sugar or none at all (no peanut powder) at Jinde Spring Rolls. With thick soups or eel noodles, add a little of the black vinegar or white pepper on the table: the sourness and salt lift the sweetness and the whole thing comes into balance.
