✦ CHAPTER VI ✦
Eel noodles | Stir-fried soul of a Tainan night

Eel is a celebrated dish of southern Taiwan, and here it is prepared the same day, so freshness is guaranteed — you can taste it in one bite. Tossed over fierce heat in an iron wok, sour, sweet, salty and fragrant fill the night at once.

A-hui Stir-Fried Eel

A Tainan institution of more than fifty years, insisting on the dormancy method of preparing eel so the flesh stays crisp and fresh; the sauce is simmered slowly for two hours from pure rice vinegar, onion and sugar. Most crucially, the yi noodles are made with duck egg — springy and beautifully fragrant, a perfect match for the crisp eel.

LEGENDARY TASTE · WOK HEI

On Minzu Road, A-jiang Eel Noodlesis called the eel noodles nobody may mention, because it is so good and so understated that even reporters hesitate to shout about it. Chengbian Zhenwei Eel Noodles

SINCE 1970 · SWEET AND SOUR

Founded in 1970 and now carried on for more than half a century. The shop is known for eel stir-fried with plenty of wok energy, the balance of sour and sweet judged exactly — a flavour familiar to Tainan memory. Everything is cooked to order, mildly spicy by default, and you can choose thickened or unthickened. That fragrance from high-heat tossing, interwoven with sour and sweet, is an old flavour with a new soul.

城邊

✦ CHAPTER VII ✦

With squid delivered straight from the harbour, freshness is the only secret. A clear, sweet broth and springy rice noodles: simple, and endlessly worth returning to.

Ye Family Squid Rice Noodles

BROWN RICE NOODLE · NATURAL SWEETNESS

Unlike ordinary Taiwanese rice noodle soups, this shop uses thick rice noodles made from brown rice, with a faint fragrance of grain and a better texture. The broth is simmered slowly from squid and lifted with pepper, rich and savoury with a sweet finish, concentrating the flavour of Tainan’s coast. The squid is crisp and springy, and every mouthful lingers.

✦ TAINAN FOOD HIGHLIGHTS ✦

Distinctive food of the old city

A-ming Pork Heart Glass Noodles

CRAFT COOKING · LEGENDARY PORK HEART

A long-established name in Tainan offal cookery, trading for nearly seventy years. The pork heart soup is the signature. Apparently ordinary ingredients take on a fine, delicate flavour in skilled hands; the broth is rich, and the owner still uses the aluminium cup water-bath method to keep the offal crisp and tender.

阿明

Steamed Shrimp Meatballs

COLORFUL PAN-FRIED BUNS · TAINAN LOCAL FAVORITE

The filling uses Xian 17 pork raised in Yunlin, set with white shrimp farmed in Xuejia, Tainan, washed only in brine, shelled and flash frozen with nothing chemical added. The shrimp keeps its whole form, yet its savour never dominates, merging with the pork into something rounded. Most distinctive is the sauce: lightly sweet with bonito fragrance, so that each mouthful is like drinking a mellow bowl of bonito broth. A refined representative of old-city meatballs.

肉圓

Chengshi Claypot Noodles

KONBU BROTH · HAND-MADE NOODLES

Originally a roadside cart, the shop moved into a lane beside residential houses only in 2020. It specialises in claypot yi noodles with a broth simmered slowly from kelp, clear and refreshing. We recommend the generously filled clam version: the fine handmade yi noodles absorb the essence of the broth, sweet with real bite — every mouthful a plain but lingering Tainan flavour.

鍋燒

Jinde Spring Rolls

GRIDDLED SKIN · RICH INGREDIENTS

The filling combines shrimp, cabbage, pork, shredded egg and lima beans; once rolled, the shop lightly griddles the skin for extra fragrance and a firmer bite.
Sweetness can be adjusted to taste, from none to very sweet — customisable like a hand-shaken drink.

金得

Du Xiao Yue Danzai Noodles

FOUR GENERATIONS · SHRIMPY ESSENCE

A Tainan institution now in its fourth generation. Most captivating is that fragrant bowl of danzai noodles: the minced pork is cooked to a secret family recipe, wonderfully aromatic and balanced between salt and sweet; add shrimp broth and garlic and one mouthful tells you why it has been famous for a century.

Aizaicheng Shrimp Rice

HISTORICAL SHACK · FIRE-SHRIMP

Trading since the Japanese colonial era, the shop takes its name from the founder’s short stature, which customers turned into a nickname that became the name itself. The shrimp rice is made with Anping’s speciality fire shrimp, fragrant and richly flavoured — a classic taste of Tainan street food.

蝦仁飯

A-song Gua Bao

PORK TONGUE FILLING · PEANUT SAUCE

Unlike the usual gua bao made with pork belly, A-song fills his with pork tongue, giving a particularly springy tenderness. Pickled mustard greens with preserved mustard tuber and pickled daikon add crisp layers, and instead of the traditional peanut powder he uses peanut butter for greater richness. Every mouthful is vivid and layered — a new flavour in old-city street food.
