Part 1: warm comfort late at night — soups, congee and noodles

Supper in Tainan usually begins with a bowl of hot soup. It warms the stomach and the heart, the finest overture to ending a day or beginning a night.

1. [The king of beef soup] Two generations of freshly scalded sweetness

There are plenty of famous places with queues of visitors, but the delicious beef soup beside Chihkan Tower, ten minutes on foot from 3 Door Hotel — the locally runShijingjiu Beef Soup, trading for more than forty years — opens from five in the afternoon into the small hours, making it a true friend to night owls at supper time. That pink flesh cooks in an instant in the scalding broth, and the sweetness as it enters the mouth is beyond anything frozen beef can offer. The broth is a clear beef bone stock with no vegetables, fruit or herbs. Some find it too plain, but only this way can you taste the natural sweetness of thebeef— and that is the most authentic way to eat it.

A word from 3 Door: Locals order a bowl of minced pork rice as well, lay the half-cooked beef on top and spoon over the broth — the hidden, finest way to eat it!

2. [The soul of savoury congee] A milkfish feast brimming with the sea

This is notordinary congee but rice in soup, every grain distinct and soaked with fish bone stock. Plenty of milkfish belly, fish skin and oysters, scattered with fried shallots and chopped celery: every mouthful is the generosity and freshness of a coastal Tainan.

Yuejin offers two versions, regular and mixed, both with Spanish mackerel and oysters; the mixed adds milkfish for NT$15 more. You can also choose whether to add youtiao: NT$10 for half, NT$20 for a whole one.

A word from 3 Door: Remember to order a youtiao: steeped in the congee until half soft and half crisp, it is the soulmate of this dish.

3. [The universe of claypot noodles] Generous and nostalgic

The claypot yi noodles many have eaten since their student days come down to that distinctive fried yi noodle texture and the clear, sweet broth made from bonito and kelp. Add crisp fried tempura and a soft-boiled egg and you have the plainest happiness a Tainan person knows.

A word from 3 Door: If you can take heat, do add the house satay chilli sauce; the layers of flavour lift immediately.

Part 2: the street party that grows as the night deepens — grills, stir-fries and braises

As the night grows late and a few friends gather, bold flavours to go with a drink are exactly right. Raise a glass to the old city with noise and fragrance.

4. [The art of charcoal] Japanese skewers in an old house

Tainan braises lean sweet, and the braising liquor is each shop’s soul. This one braises everything through and then chills it quickly, so the texture stays springy and the fragrance of the sauce is locked inside — ideal to take back to the hotel as company for late-night viewing.

A word from 3 Door: Their duck wings and pig’s blood cake are the essential orders, and they sell out if you come late!
