The shop is clean and simple in style, and the crispness of it alone drops the temperature three degrees. What they do best is take simple toppings to their limit: the tea is clean and sweet without astringency, and the toppings are anything but stingy. One cup cools you down and fills you up.

4. Yinliang | A warm little shop down a lane, with an extremely cute labrador manager

A cosy tea shop hidden in a small lane off Beimen Road. The name Yinliang actually belongs to the owner’s very charming labrador, and with a bit of luck the manager will greet you personally. The shop specialises in carefully blended Japanese-style teas – gentle and easy to drink, ideal for picking up on a walk.
Strongly recommended:
• Kyoto-scented latte: the balance of tea and milk is judged exactly right – full-bodied without being heavy.
• Kyoto-scented green tea: an elegant sencha fragrance that quenches your thirst in one long drink.

Right opposite Wufei Temple, this tofu ice is genuinely addictive. The tofu here is in fact an almond, matcha or milk pudding as silky as custard. Spoon it over clean shaved ice, add generous toppings, and the texture is wonderfully springy. Five stars for cooling power.

• Matcha tofu ice with red bean and condensed milk: the faint bitterness of matcha against sweet red bean, with condensed milk adding a dairy note – distinct layers of flavour.

4. Lily Fruit Shop | The original institution, and the purest fruit sweetness
Founded in 1947, this fruit shop near the Confucius Temple is something of a Tainan landmark. What you taste here is the natural sweetness of the fruit and the appeal of old-fashioned syrup. Beyond the fruit ice, try the tomato plate unique to the south: dip it in the house ginger and soy paste, and the salty-sweet-spicy strangeness of it will open your eyes.
