The shop is known for eel stir-fried with plenty of wok energy, the balance of sour and sweet judged exactly — a flavour familiar to Tainan memory. Everything is cooked to order, mildly spicy by default, and you can choose thickened or unthickened. That fragrance from high-heat tossing, interwoven with sour and sweet, is an old flavour with a new soul.

What sets this place apart is that the owner moves with a distinctive rhythmic step while stir-frying, earning her the title of queen of Tainan eel noodles and drawing crowds to queue. Apparently ordinary ingredients take on a fine, delicate flavour in skilled hands; the broth is rich, and the owner still uses the aluminium cup water-bath method to keep the offal crisp and tender.

The filling uses Xian 17 pork raised in Yunlin, set with white shrimp farmed in Xuejia, Tainan, washed only in brine, shelled and flash frozen with nothing chemical added. The shrimp keeps its whole form, yet its savour never dominates, merging with the pork into something rounded. Most distinctive is the sauce: lightly sweet with bonito fragrance, so that each mouthful is like drinking a mellow bowl of bonito broth. A refined representative of old-city meatballs.
