Floating milkfish thick soup is one of Tainan’s classic dishes, andA-feng Floating Milkfish Thick Soupis among the very best of them. The fish paste is made by hand with genuine ingredients; the floating dumplings are filled with boneless milkfish, and the paste itself is made from milkfish with coriander, shredded ginger and black vinegar — springy, sweet and pleasing to bite. The broth is thickened to exactly the right degree, and with a dusting of pepper and a splash of black vinegar, sour, sweet, salty and fragrant interweave in the mouth and linger long afterwards. Have you ever eaten supper sitting in front of a temple at night? The Ye Family no-menu barbecue stall in front of Magong Temple in Tainan has been sending out its fragrance for fifty years, a late-night kitchen at the temple gate known only to locals. The owner holds to traditional charcoal grilling: the grilled clams are plump and hold their sweet juices, and the essential grilled chicken thigh is crisp outside, tender within and full of juice. Business is brisk and it often sells out in under five hours, so go early (and ideally call first to check it is open).

In the Tainan evening, Crème Anglaise lights a lamp and prepares something sweet for dessert lovers out after dark.This summer’s limited parfait uses a frozen mango cheese mousse in place of ice cream, with a mint and lemon chantilly through the middle for a herbal layer of acidity, alongside fresh Irwin mango and sponge. Beneath lies a flowing mango sauce and a mint, lemon and lychee jelly, finished with sweet flakes made from Montagu butter. “We wanted it to taste like a dessert version of a mojito. There is no alcohol, but it can be enjoyed alongside an actual cocktail — another invitation to extend the palate.”To keep the fresh acidity of mint and lemon from being masked, they chose Nakazawa cream to lubricate and support the parfait. “It is a dairy product, but Nakazawa cream makes lightness the main body of this parfait. It whips stably, eats light, and does not overpower the other ingredients.” The chef steeps mint leaves in the cream and adds fresh lemon juice for a bright chantilly; because Nakazawa cream tolerates acidity and holds air well, the chantilly finds a balance between aroma, texture and stability.Nakazawa cream and pure fresh cream are also widely used in Crème Anglaise’s tea series of cream rolls. “We add all kinds of tea — hojicha, ruby black tea, matcha — and also plenty of rich Taiwanese flavours such as crisp plum and pork floss. Nakazawa cream carries all of those aromas completely, without stealing the flavour and without weighing it down.”(The above is a wonderful account from their chef.)

The soft Japanese sponge, made by a distinctive method, delivers something simple, clean and pure! Beyond the classic, the shop develops innovative Tainan flavours such as wood-fired handmade brown sugar, or even milkfish with taro — unexpected flavours waiting for you to try!
5. The gentle assault of toast: the fragrance of soy beans late at night


On a night when the smell of toasting wakes you, how could you not eat toast? The toast is spread with a layer of margarine so the buttery fragrance is especially clear, and the egg crepe has a thin, springy skin with a faint char after frying, which you dip in satay sauce yourself — an order any Tainan local will make. As for the drink, do not miss the soy milk, fragrant with beans and smooth down the throat. If you prefer milk tea, theirs is worth trying too, made with Kaoda fresh milk poured straight in. The sign on this fifty-year-old shop has almost entirely faded, showing three large characters reading Dounaizong, radiating old-fashioned character — worthy of nearly half a century in business.
