Stop two: today’s main event — the Tainan International Orchid Show and Floriculture Technology Exhibition, No. 325 Wushulin, Houbi District, Tainan
Stepping into the exhibition halls really was astonishing. There are several hundred orchid varieties here, many of them rare and a great number I had simply never seen before. It is the largest and most complete orchid display I have ever visited. Residents, travellers and orchid lovers come from far and wide. Orchids, technology and art are fused together, drawing out the flowers’ delicate brilliance to the fullest. People photographing, people moved, people thrilled — add fine weather and the bustling halls became a distinctive scene in themselves. Surrounded by that subtle fragrance, looking at orchids in a thousand shapes and colours, my whole body felt deeply healed by pure natural beauty.
And while admiring these beautiful orchids, I — as a butler at 3 Door Hotel — felt a deep resonance rising in me, and came away with something of my own.

Stop three: Zhuxiangyuan, No. 6-31 Xiancao, Baihe District — traditional urn-roasted chicken
Baihe’s urn-roasted chicken (centred on the Guanziling area) uses local free-range birds roasted at high heat inside an urn over longan and other hardwoods. The skin comes out thin and crisp, the meat tender and juicy, and the presentation handsome; it is often served with carefully stir-fried mountain greens and a bamboo shoot soup simmered in chicken jus. Specialities include hand-torn chicken, rice tossed in chicken fat, and chicken with perilla plum.
There were four of us today, and we ordered just one whole roast chicken, one Hakka stir-fry and one plate of water lily stems; with the complimentary sweet potato crisps the house sent out, we were already full — and thoroughly well fed.
