Beef bones, brisket, beef fat and onion are simmered slowly with nothing artificial, and served with warm beef sliced thin by hand. The meat is a tender pink, the broth clear and sweet; with a bowl of savoury minced beef rice alongside, this is where Tainan gets its energy.<\/p>\n<\/div>\n <\/p>\n Built around milkfish, southern Taiwan’s great speciality, and following the Quanzhou half-congee method so the grains drink up the broth without collapsing. The broth is clear and sweet, the fish melts in the mouth, and dipping the youtiao into the soup is the most authentic way to enjoy A-han.<\/p>\n<\/div>\n <\/p>\n Wrapped and steamed in shell ginger leaves for a distinctive, delicate herbal fragrance. The filling is nothing but plump peanuts, finished with sweet soy paste and a generous dusting of peanut powder.
